Description
The long, thick, smooth roots can be cooked like asparagus in winter. Salsify, with the botanical name Scorzonera, has an intense and nutty flavor. The vegetable originated in Spain and was originally used for a remedy for snake bites and the plague. Salsify is very healthy, because in addition to the vitamins A, B1, B3, C and E, they contain a lot of potassium, magnesium, phosphorus and are abundant iron. Salsify are generally regarded as an ideal food for diabetics. In the kitchen, they are very versatile and can be used as an appetizer, salad, as a side dish with meat and fish or as a gratin and stew.
