Description
This ancient crop is from the mountain region of the Andes. The small seeds can be eaten or grown as sprouts. The plant has large, green inflorescences that turn reddish when the seeds are rubbed off in September.
The seeds are coated with a saponine that can be removed by rubbing the grains between two cloths, or letting them stand in water before rinsing them in the kitchen.
Sow: under glass in APril. In May you can so outdoors after the last frost.
