Beta vulgaris

Description
Unmistakable orange golden beets with golden flesh that doesn't "bleed", which simplifies preparation in the kitchen. Young beets only need to be washed whereas mature beets should be peeled. Use for a delicious, sweet taste in salads or as a cooked vegetable. The stems and leaves can be eaten raw, steamed or as a tasty alternative to chard or spinach. A vegetable with no waste.
Serving
The larger beets are suitable for baking because of their higher sugar content. The leaves are a delicious alternative to spinach. Young shoots can be eaten like spinach and are rich in beta-carotene, calcium, iron and folic acid. The beets contain betacyanin and are a good source of manganese, a mineral that is important for bone formation and metabolism.
